California Waldorf Celery Salad

California Waldorf Celery Salad


Serves 4
2 cups (8 stalks), chopped
1 cup apple, cored and chopped
1/2 cup walnuts, chopped
1/2 cup dried cranberries
1/4 cup mayonnaise
1 Tablespoon lemon juice (1/2 lemon)


Clean 8 stalks of celery. Slice celery stalks down the middle lengthwise and them crosswise into 1/4-inch pieces and place in bowl.


Core and chop apple into 1-inch chunks but do not peel. Squeeze lemon juice over the apples as you toss them.


You can roast walnuts in the oven or toaster oven at 350F for about 5 minutes. Roasted walnuts are much tastier and worth the effort. Chop into coarse pieces and toss with celery.
Add dried cranberries and toss. Add mayonaise, and adjust seasoning to taste. This salad is better served a little chilled so refrigerate for 1 hour before serving.
